I am working out a materials list before building a stitch and glue boat. Is there any information comparing the various honeycomb panel products... Plascore, Nidacore, Carboncore, or any others? Thanks

I settled on Nidacore - since it can be folded, it's much cheaper to ship. 

Folding implies the skin on one side is cut or otherwise interrupted. Is this correct? Does a folded product have limitations in how you use it?

Correct, the skin on one side is cut. This allows the product to be used to create curved surfaces. Since the strength of the skin is provided by the glass & epoxy laminated to it, I don't believe there's a drawback.
