Here is a quick question.
If you are planning an oiled interior and a painted/varnished exterior - do you varnish the outer handrail - then oil the inner handrail? Or do you guys varnish both rails due to the fact they are both handrails? This might sound like a goofy question - but I was sorta torn on how to handle that when the time comes... if I should varnish both rails, I figured I had better do the inner before I install it...

if you are going to varnish the out side rail then do the inside one too, or oil both either way i think its better that they match. on that note I would also varnish the fly line deck, knee board, front seat top, and seat backs. they are high use items and the varnish holds up better than the oil. maybe its just me but i have left a wet rope on a oiled fly line deck for a day or too and could never get the stains out of the deck.
This is good to know. I was planning on varnishing all the seats, fly line deck/horns, and floorboards. The frames and the inside (sides and floor) will all be oiled. What do you think of that idea?

We're in the same boat... haha, pun intended. What I intend to do is pretty much exactly as Sanderson said.
Varnish it all outside, inner and out rails, seats, seatbacks, seat tops, fly line deck, horns, oarblocks.

Oil the frames, floor, Interior sides, floorboards. On the floorboards I add more drier in the oil as to avoid the stickyness.

I have wrestled with that question myself as I am restoring my boat and will paint the outside and oil the inside. I have rested on this conclusion. The handrails are kind of like the threshold of a door, a connection between the exterior and the interior; better said, the beginning of the interior. With that in mind, I am going to oil both the outside and the inside rail. Hopefully this provides a little insight.

I varnished both inside and outside rails for the reason that it seems more "balanced" to me.
I also agree with the comment that on high use areas, varnish holds up much better than oil does.
In my experience, the rails get a lot of wear.

Just my opinion.
