So I would say the system I use to accomplish that. The anchor rope heads out the floor mounted anchor release to a pulley mounted where the transom and floor come together. That pulley allows the rope to then proceed parallel to the transom to a pulley that's mounted through a slot in the transom. When I'm back at my storage barn today I'll take a picture and send it to you.
This link should take you to Bo's anchor system. It appeared to be very popular and aesthetically pleasing with the wood boat crowd so it's what I used. Not saying it's the best but it seems to be a great choice.
