Paint
A few Questions here?
First off will removing old paint and varnish from interior and exterior of my boat with an electric sander harm the boat?
Second: Once the paint and old varnish are off I would like to re-paint the outside and am not sure what paint to buy or from where. I would like to paint the outside black.
On the inside I can paint but would like the inside to have the wood look so what is the best coating to put on the inside?
Thanks in advance as I know you will have all the answers I am looking for.

Sander, well, it won't do any damage unless you sand thru the ply or something, but its time consuming and you would have better luck with a stripper..there are many that are non toxic and Eco friendly. The stripper will pull most everything, the rest will easily be taken care of with a sander.
Paint is a subjective question, depends who ya ask. On the cheap, you can use an oil based porch and deck or all surface enamel. You could also use a mid grade one part marine paint like Pettit ezpoxy or interlux bright side. You can also go for a 2 part marine or epoxy paint which is expensive, not easy to touch up, and probably not worth he effort.
For the clear interior, I'd probably just go with oil...linseed/turp home brew or teak oil. Spar varnish is another option..most people here are scared of it though for all its maintenance...although if you cover your boat a good varnish job should last quite a while, especially if you epoxy underneath. When its time to refinish there is scraping and sanding involved. Oil is more maintenance heavy as u need to oil every season, at least once or twice, but its easy maintenance... paint it on in the sun, let it sit for 15-20 min, wipe, enjoy the new looking finish

No use removing all the paint if your going to paint again,just remove the stuff thats lifting and scratch up the rest and paint over.
I'll leave the interior stuff to the pros.

What kind of wood? Fir or an exotic? Is ther any fiberglass cloth beneath the paint?
I'm with Tungsten- outside of hull, scrape the old paint, no need to get every speck off. prime and repaint. Plain old exterior grade latex over Bullseye/Zinsser exterior primer.
Interior- you are in for lots of work. If it is fir with no glass you are likely to have checking. Paint will be in the old checking. Checking is character, it isn't bad. if it is bare fir, (no glass) oil it. If it is an exotic, some take oil better than others. if there is glass, do as the outside and paint it again.

Dave Z. the wood is fir and I believe I will just hit the outside a scraper and get the flaking paint off and then prime and pain the outside. I am not sure what was done on the inside (it is not painted) but it does have some sort of coating over the wood some of which is flaking like the paint on the outside . Like I said I like the wood look on the side but could really care less just want to protect the boat and have the least amount of work to keep it looking good.
The boat is really old but in really good shape so I want to preserve what is there and not have major issues down the road.

Things are really great Kurt. So awesome to hear from you. If you all get a chance come on over lets do some skiing this winter. As well next summer we can chase some big fish right out my back door.

Dutch oven cooking and wooden drift boats! We took three boats down the South Fork of the Snake in Eastern Idaho last October and I did all the camp meals using dutch ovens. They are a great way to feed a big group good food.

On the subject of paints-
Looking for a good durable paint for the interior. Something like what seems to be used on whitewater dories.
Also looking for an exterior paint. I tried the old cheap oil based enamel, and I was not the biggest fan (it chipped really easy).
Im sure this has been posted on a bunch in the past, just hoping for some quick advise!
