What has been your experience with using 10 oz. cloth over plywood with epoxy? I know 6 oz. becomes very transparent. Is 10 oz as clear? Suitable for finishing bright?

No, for that reason only use it on the bottom of the bottom, with graphite

In addition to the cloth You need to consider the epoxy too.  West's 105/207 is formulated for a "Clear" finish.  Other epoxies , MAS, System Three, etc. have a resin/hardener combination similar to West's.

I used a double layer of 6 oz. on the bottom of my cedar stripped canoe with West's 105/207

Epoxy and achieved a nice clear look.  It took 8-9 coats of varnish to make it pop, but it works.

I use almost nothing but 10 ounce and I find it to be clear.  If you are not sure just glass up a piece of scrap. I think you won't really see much difference.
