I am ready to seal the bottom of the boat.  What are the pros and cons to finishing the bottom of the boat; epoxy then glovet, fiberglass then glovet, or what?

What's glovet? Google thinks it's either a place in Qatar or a veterinary service. I wouldn't recommend either for a boat bottom.
Try a GLUVIT search. It has been used in this neck of the woods with modest to minimal success. I wouldn't recommend it. Traditionasl 14/-inch wooden shoe is pretty bullet proof, as is 20 to 24 ounces of fiberglass cloth and epoxy resin. There are good posts related to the application of both on the forum.
I would suggest that you "glovet" when you perform certain veterinary tasks on cattle, maybe Mike Rowe has an opinion on that. They make some especially long ones that are ideal.

if your going to consider using glovit, consider using a product called coat-it. I find it tougher, longer lasting and a bit less expensive. I use coat-it on the shoe only
Epoxy and glass... then call it good. I have been putting my fiberglass bottom to task for the past year and it is holding strong. scratched to all hell - but no major problems.
