So I just picked up this boat...and this is what the interior looks like.  It appears that the inside is just wood with perhaps some oil applied in the past?  but it also looks like the oil might have been stained?  I'm not sure...this is all new to me.

So...could anyone recommend how to keep this interior in the best shape possible?  I've read a lot of previous posts on using oil, and that's what I'll do going forward, but I just want to make sure I'm not missing something or messing anything up.

It is common to add color to oil, but maybe not in boats.  You mix Boiled Linseed Oil and paint thinner 50-50 with a few drops of Japan Dryer for your basic oil mixture.  At that point you can add oil based paint in what ever color you desire. Just add enough color to achieve the color density you desire.  It doesn't take much.  It looks like the previous owner used a black color on the interior.

If you don't mind the color variations you currently have just add the basic oil mixture and see what you get.

Dorf, I would bet that this boat's interior was finished with "Boat Soup", a homemade mixture of turpentine, linseed oil, Japan Drier, and perhaps other materials. From pictures I have seen the color results from time and aging of the linseed oil.
