Which is better, Epoxy or Poly? Secondly as you build the boat would it be wise to give every piece a coat of epoxy/poly before it gets installed? My logic for asking is, water likes nooks and cranked due to capillary action and since so many of the pieces will have a tight fit initially, but over time with the boat doing a little twisting this could cause cracks in the vial coat(s) of finish, thus leaving places for eater to hide. I also realize if you put too much epoxy/poly on you could have issues with tolerances and dimensions .

I say no epoxy inside.  But that's me.  Oil is attractive for exactly the reasons you state.   The problem with a framed boat and epoxy is that water WILL eventually find its way under the finish in those nooks and crannies.  when it does, it gets trapped and rot prone.

Most of y'all know where I stand. But yeah, I don't know if poly has a place in marine applications.

I agree with Larry,

Remember that epoxy is not UV resistant and needs to be protected from the sun with another coating of paint, varnish, or other UV clear coat.

I would stay with epoxy.  Polyester is not as water proof and does not bond as well.

I coat all wood pieces with epoxy to seal them.
